Grilled Chicken Breasts or Quarters with Lemon & Thyme

A bold mixture of red-pepper flakes, garlic, thyme, lemon juice, and olive oil serves as a spicy marinade for bone-in chicken breasts. If you want your chicken spicier still, increase the red pepper or leave the breasts in the marinade for an hour or two. Use recipe for either Chicken Breasts or Chicken Leg Quarters!

Ingredients
- (1 1/2 Tbsp) Lemon Juice
- (1/2 Tbsp) Thyme
- (1 tsp) Dried red-pepper flakes
- (1/4 cup) Olive Oil
- Freshly ground salt & pepper
- (4) Chicken Breasts Boneless Skinless
- (4) Chicken Leg Quarters
Directions
Step 1 – Light the grill or heat the broiler in your oven. In a shallow dish, combine lemon juice and remaining ingredients. Coat the chicken with the mixture.
Step 2 – Grill the chicken breasts over moderately high heat, or broil for 5-7mins. Turn and cook until chicken is just done, about 5 mins longer.
Variations
- Try any herb you like in place of thyme. Marjoram, oregano, rosemary, or sage are great choices.
- Use leg quarters instead of chicken breasts. Allow for 13mins per side for leg quarters.
