Green Tomato Salsa
Using "Green Tomato Salsa Starter Pack" from the Back Porch Market

Ingredients

1lb Green tomatoes (green = unripe) halved

2-3 Jalapeños thinly sliced

1/2 Medium white onion 

1/2 tsp Salt or to taste

1/2 cup Fresh cilantro chopped

1 tbsp Fresh lime juice or to taste

Drizzle of olive oil or oil of choice

Recipe

Start by heating your oven to 450* and lining a baking sheet with parchment paper

To prepare your vegetables: 

Wash and halve your tomatoes and jalapeños, removing tops as you go

Quarter the onion (keep it chunky - will be blended later)

Chop fresh cilantro

Add tomatoes, jalapeños, and onion to parchment line baking sheet. 

Drizzle all ingredients with olive oil and add a pinch of salt.

Once oven comes to temp, put pan in and roast veggies for 20-30 minutes. 

(Understand this may be longer or shorter depending on your oven and preferences)

The goal is to get the vegetables to a tender and lightly charred state.

Once everything has become tender and roasted, pull out to cool.

Add the cooled vegetables to your blender or food processor.

Add the fresh cilantro, salt and lime juice and blend everything together.

Stop periodically to check texture, blend until desired consistency is acheived.

Serve with chips, on tacos, or on top of a steak! However your heart desires.
